What Is Usually Behind It
A refrigerator, freezer, or wine cooler holds temperature by reading the cabinet with a sensor, then opening a damper or cycling the compressor to correct it. When the temperature will not settle, one link in that loop has broken. A thermistor that has drifted feeds the control a wrong number, so it corrects toward a temperature that does not exist. A damper that sticks lets too much or too little cold air through. A door seal that no longer holds lets warm air leak in, so the cabinet warms until the compressor catches up and then overshoots. Each produces the same frustrating pattern of numbers that never sit still.

Check the Simple Things First
Make sure the doors are closing fully and not blocked by a drawer or container, that the unit is not packed so tight it blocks airflow, and that a recent grocery restock has had time to settle. If the swings continue after that, the fault is internal and worth a visit.
